Penne with Tomatoes and Herbs

Ingredients

  • 2 large ripe tomatoes, cut in half, juice gently squeezed out, chopped in ½" dice
  • ½ cup chopped fresh herbs 
 (use at least three): mint, 
 basil, sage, oregano, thyme, parsley
  • Salt to taste
  • ¼ cup extra-virgin olive oil
  • 1 lb. penne or fusilli

About this recipe

Serves 4  This pasta dish takes only minutes to make, about as long as it takes to cook the pasta.

Instructions

Cook pasta in boiling salted water according to package directions. Meanwhile, place tomatoes in large bowl and sprinkle herbs and salt on top. Heat olive oil in small saucepan just until it shimmers. Immediately pour on top of herbs and tomatoes. Stir to mix well. When pasta is cooked al dente, drain and add to tomato mixture and combine thoroughly. Serve at room temperature.
