Candied Ginger

Ingredients

  • 1 6-inch knob fresh ginger
  • 1/3 cup sugar, plus additional for coating
  • 1/3 cup water

Instructions

Peel ginger and cut into 1/8-inch disks. Combine sugar and water and bring to a boil. Add sliced ginger. Reduce heat and cook about 30 minutes, until ginger is tender. Strain (save ginger syrup for another use) and dry pieces of ginger on a rack overnight. Toss with sugar and store in airtight container for two weeks.
